Dakotah Ruby was released in 2014 by the North Dakota Agricultural Experiment Station. This variety produces reliable yields of uniform potatoes that are 4-6oz on average (smaller than Red Norland and Red Pontiac). The bright red skin is rich in antioxidants, and the color does not fade in storage or after cooking. If you want flashy red, round, B size potatoes with a smooth skin then this is your ticket! The breeder, Dr. Susie Thompson, has released five other potato favorites during her career at North Dakota State University.
Growing Guide: Less is more with fertilizer as yields are better without excessive nitrogen which can cause problems with skin setting.
Designed for the retail/gourmet market rather than processing, Dakotah Ruby is a firm, waxy-type potato that is best prepared boiled, in soups, and in salads. It has a good taste and does not require heavy seasoning to be thoroughly enjoyed.
